Pistachio Crusted Sea Bass

  • 2- 6 oz Fillets of Chilean Sea Bass
  • 1/2 C Unsalted Chopped Pistachios
  • 3 Tbsp Olive Oil
  • Juice of 1 Lime
  • Salt & Pepper to taste
  • **You can find unshelled pistachios in your local grocery store
  • *** Chop nuts in mini food prep (processor)
  •  

  • Pre heat oven to 350 degrees F
  • Place pistachios in shallow dish
  • Place fish in second shallow dish
  • Squeeze juice of lime onto fish
  • Drizzle with 1 Tbsp of olive oil
  • Season with salt & fresh ground pepper
  • Be sure to roll fish around in order to coat both sides, let stand for about 20 minutes
  • Press fish into ground pistachios on one side
  • Heat olive oil in oven proof skillet until very hot but not smoking
  • Place fish in skilet nut side down to sear, about a mnute or two
  • Turn fish over and bake in oven for about 15 – 20 minutes or until done
